Introducing a breakthrough in the world of food and pharma science and technology! Through extensive research conducted in collaboration with the University of Piemonte Orientale, we proposed our Pea Peptides as a novel emulsifier. Pea peptides stabilize oil-in-water emulsion with adequate characteristics to be processed by spray drying obtaining polynucleate microcapsules. This discovery promises to improve food and pharma formulation and processing by offering a natural and sustainable alternative to traditional emulsifiers. A new era of healthier, eco-friendly, and more stable food and pharma products is approaching.
